Cinnamon Ice Cream

Oooh, about to drip!  I’m not very good at photographing food, but I’m good at eating it.

We’re all about summer food at our house, so it was time to break out the ice cream maker.  I used this recipe for cinnamon ice cream and it was really, really delicious.  Now —  it has two teaspoons of cinnamon, so it is quite flavorful but even my kids liked it.  I think it would be excellent with a blueberry or peach cobbler.  This recipe contains eggs which I was skeptical about using for ice cream,  but I think it made it thicker and creamier.  And we didn’t get salmonella, though my four-year-old did blow some cinnamon in her eyes which resulted in 15 minutes of crying followed by a nap.

Banana Bread Granola

Today we made a granola recipe from Silver Palate oatmeal, found here.  We used walnuts, chopped banana chips and dried blueberries, which makes it taste like banana bread.  Yum!  This is the best granola recipe that I’ve tried so far — might have something to do with the cup of maple syrup in it.

Whoopie Pies

I was looking for a decadent dessert to serve to runners post-marathon (my husband’s TWELFTH marathon).  So I decided to make whoopie pies.  Then I saw this article in the New York Times.

I was excited to learn that Marshmallow Fluff is vegetarian since my children are denied marshmallows, but it has some pretty unhealthy ingredients so I couldn’t bring myself to buy the large jar.  Instead, I used a small jar and substituted with butter.  You could accomplish the same thing with egg whites, but it always makes me nervous to put egg whites in icing.  The pies were just about like a messy cake with oozy icing in the center, but they were good and the kids definitely enjoyed them.

Cheesecake & Roses

I’m doing a lot of blog catching-up today.  I hosted a wedding shower over the weekend and made these mini-cheesecakes.  I saw this post at Skip to My Lou and had to buy these mini-cheesecake pans.  I used a basic recipe from King Arthur Flour, but I added a tablespoon of lemon zest to the batter and spooned some lemon curd on the top.  I also used a different crust with graham crackers and crushed almonds.  Mine look much messier than those on the King Arthur website!  I’d like to say that was due to the kids helping me (which they enjoyed very much), but really I’m just messy all on my own.  This was such an easy dessert that I will definitely make again.

And here are some simple roses that I arranged in glass containers for the mantel.  They are a really interesting greenish-yellow color that reminds me of new spring buds.

Happy Valentine’s Day!  I made these vegan chocolate cupcakes from Chow that I posted about earlier this week.  The basic chocolate cupcake recipe is excellent and you could fool anyone with this.  This recipe was given the kid stamp of approval!  I used dark cocoa powder.

I made the icing recipe suggested with some beet juice added for color (you can’t taste it and it’s natural).  I would recommend adding some other flavoring to it as it needed something — maybe peppermint, lemon, chocolate or the sandwich cookies they offer as an option.  You can also see that it didn’t come out silky smooth, but my icing piping thinga-ma-jig isn’t working, so that might have helped.

I love these cards from some e cards.  They totally fit my cynical sense of humor.
