I was looking for a decadent dessert to serve to runners post-marathon (my husband’s TWELFTH marathon). So I decided to make whoopie pies. Then I saw this article in the New York Times.
I was excited to learn that Marshmallow Fluff is vegetarian since my children are denied marshmallows, but it has some pretty unhealthy ingredients so I couldn’t bring myself to buy the large jar. Instead, I used a small jar and substituted with butter. You could accomplish the same thing with egg whites, but it always makes me nervous to put egg whites in icing. The pies were just about like a messy cake with oozy icing in the center, but they were good and the kids definitely enjoyed them.

Denied Marshmallows?

Well, I feel bad about denying them marshmallows, but really hate the idea of my kids eating gelatin. For those of you who don’t know (which seems to be a surprising number of people), gelatin is made from crushed animal bones. Mmmm, tasty!
Anyway, I went to the vegan shop and bought them some delicious homemade marshmallows and they didn’t even like them! So, oh well.
Oh my, those look divine. This extremely sleep deprived Mama is craving something very sweet right now. I want some of those. Wow.

Trois Pommes Patisserie in Park Slope, Brooklyn, mentioned in the NY Times article is a block from my home… I just walked by and Almost stopped to pick up Whoopie Pies!! I might have to go back out for a treat after dinner (this post is making my mouth water!)
I made these for Luke’s first birthday party and saw this in the NYT as well and made me so nostalgic. (I love the Fluff idea!)
Oh those look decadently delicious! As far as I know, we don’t have marshmallow fluff here in Aus, I’ll need to do some thinking on that one.
you know im one of those people who have to wash their hands 4-5 times after touching raw meat or getting eggs on my hands (not ocd…just scared). i was so scared to use an icing recipe that called for egg whites just because its raw eggs! but i had to use them for royal icing. i was even afraid to eat it after i put it on the cookies and let it dry. so i fed them to my husband and his mom just to make sure 😉 no one got sick..even after the cookies were a couple of days old! it still really freaks me out…but i have never been sick from it so far! here is a site i find helpful when it comes to eggs! http://www.aeb.org/LearnMore/Faqs.htm
